Let There Be Cake
Homemade lemon Madeira loaf...My favourite!
...and seeing as the whole loaf lasted about 40 minutes....everyone else's favourite too!
Cream butter and sugar until fluffy.
Beat eggs lightly and add gradually to mixture, beating all the time.
Stir in grated lemon rind.
Sift the flour and a pinch of salt together.
Fold flour into mixture using a lge metal spoon.
Mix in 2 tablespoons of water (I use the juice of the lemon here instead)
Spoon into a greaseproof loaf tin.
Cook in centre of preheated oven for 30 minutes at 180
Reuce heat to 160 and cook for a further 30 minutes.
Slide a knife into the middle of the loaf, if it comes out clean...It's ready!
Allow to cool in tin for 30 mins before turning out.

Does this use the whole lemon shreded? I like cooking and baking so I will need to make this.
Wow! Lemon is my favorite. I am painting the kitchen Lemon chiffon. Love the recipe and the drawing is just delicious and saliva inducing the jaw to pucker.

A yummiliciously drawn lemon...mmmm...I must make some of this also! How long do you bake it and at what temp???...also what is caster sugar?? LOL :)
Oh yes me too! Love the drawing and want to taste too! What is CASTER sugar, Juice of lemon or? and how long to bake? I would love to try it.

I've added the cooking method to the post for you all. Caster sugar is simply fine sugar (smaller particles than granulated suger but not powdery like icing sugar)
If you can't get caster I'm sure granulated would suffice it would just have a little more texture I guess.
